So-Easy-A-Kid-Can-Do-It Egg Salad

“Mom, what’s for breakfast (and lunch, and dinner)!?”  Words that I hear on a daily basis, multiple times a day!  Now that my oldest son is nearing 7 years old he is learning to prepare food for himself, mostly easy things such as sandwiches, cereal, helping with meal prep and snacks.  But today he specifically requested egg salad sandwiches for lunch.  So I took the opportunity to show him how to make them and we’re sharing our super-easy recipe with you!

So-Easy-A-Kid-Can-Do-It Egg Salad

7-8 hardboiled eggs
4 tablespoons mayo
2 tablespoons mustard
Salt & pepper to taste

Peel your hardboiled eggs and place in a mixing bowl; add mayo & mustard and combine using a pastry blender.
