In an effort to do more meal planning and be more intentional in cooking healthful, hearty and tasty meals, I tried out a new recipe this evening and it was a hit. And because it was a hit, I’m sharing it with you! Easy and so delicious, these pan-seared pork chops with a lemon thyme sauce are a new family favorite in our home.
4 boneless pork chops, pounded
½-1 cup vegetable broth
Juice of a whole lemon
2-3 tablespoons of fresh thyme
2 garlic cloves, minced
Spray your skillet with olive oil or canola & heat over medium-high heat
Season your pork with some black pepper and place in your skillet; sear for about 2 minutes on each side, then transfer to a plate.
Add broth, lemon juice, thyme and garlic to your skillet and continue heating over medium heat; simmer 2-3 minutes.
Add your pork chops to the sauce and cook until meat is thoroughly cooked through, about 2-3 minutes on each side.
I whipped up some yummy skin-on garlic red potatoes, mashed, and a side of sweet corn. Even my two-year-old enjoyed this tasty meal. Hopefully you will too!
